Shoyu Chicken
 

Ingredients:
5 lbs. chicken 2 cans mushrooms
1 C. shoyu (soy sauce) 3-4 stalks green onions
2 tsp. salt 2 cloves garlic
2 tsp. oyster sauce 1 C. water
4 TBS. oil 2 TBS. cornstarch

Crush garlic cloves. Chop green onions into 1 inch lengths.
Mix shoyu, salt, garlic, water, oyster sauce and rub into chicken the night before dish is to be served. Marinate chicken in sauce overnight in the fridge.

Heat oil and brown chicken. Cover pot and simmer mushrooms and chicken until chicken is tender (1/2 hr to 1 hr.). Add cornstarch with a little water to thicken gravy. First mix some water into the cornstarch. Sprinkle green onions over chicken before serving.
